The Zorah vineyards, located at an impressive altitude of 1400 meters (4500 feet) above sea level, are a testament to the pinnacle of high-altitude viticulture. The vines here grow in Phylloxera-free, sub-alkaline, sandy soil, rich in limestone and large stones, and remain ungrafted, lending a unique character to the wine.
The vinification and aging process of the Zorah Karasi Areni Noir 2020 is a nod to ancient traditions. Fermentation occurs in temperature-controlled, concrete tanks with only natural yeast. The wine is then aged in large local amphorae, known as "karasi," which are buried ¾ in the ground, exactly as per ancient local customs. This process spans around 12 months, followed by an additional 6 months of aging in bottles.
