Domaine Du Cros Marcillac 2021, "Lo Sang del Pais," is a wine that embodies the essence of the countryside. The name, translating to "the blood of the countryside," captures the vibrant life-force encapsulated in each bottle.
This AOC Marcillac, "Lo Sang del Païs" vintage, hails from vines averaging 25 years in age. These vines are strategically planted on steep, and sometimes very steep, hillsides. The terroir is a unique blend of limestone scree at the hilltops and Permian Rougiers in the basement and at the bottom of the hillsides.
The wine is 100% Fer Servadou, or “Mansois”, a testament to its authenticity. The winemaking process is meticulous, with manual harvesting, maceration for 15 to 20 days in thermos regulated stainless steel vats, and extraction by punching down, pumping over, and unloading. The aging process takes place in stainless steel vats, with bottling occurring during the year following the harvest.
Upon tasting, the wine reveals a red color with purple reflections. It offers a fresh nose of red fruits and spices, dominated by blackcurrant and pepper. The attack is frank, mirroring the same notes of spices and red fruits, and concludes with a licorice and sometimes minty finish. The "Lo Sang del Païs" is a frank and distinctive Marcillac, showcasing the easy-drinking nature of the “Mansois” grape variety.
