Once the fermentation batch is ready for pressing, it's pressed and promptly bottled, tightly sealed and left to rest in a room at 15°C for 10 days. This allows the ongoing fermentation to naturally create the delightful effervescence that defines Uka Sparkling Sake.
Uka, meaning "emergence" in Japanese, is a union of two iconic families—Koda Farms and Ninki Shuzo. Koda Farms, a Japanese-founded farm in Merced County, California, cultivates rice transformed into sake by the 19th-generation artisans at Ninki Shuzo in Fukushima, Japan.
