Crafted by winemaker David Clouston, the focus is squarely on capturing fruit purity while producing an elegant wine with a clear sense of place. The grapes undergo cool fermentation exclusively in stainless steel tanks to preserve pristine varietal character. Following fermentation, the wine rests on its lees for three months – a crucial step that builds subtle texture and complexity without introducing oak.
