This wine is crafted entirely from the Greek Malagousia grape, a variety once near extinction, lovingly brought back to prominence through the dedicated efforts of Vangelis Gerovassiliou.
The winemaking process for this vintage is a careful balance of tradition and innovation. Following a period of skin contact at cool temperatures, the wine undergoes fermentation in stainless steel tanks at a controlled 18°C, while a portion is also vinified in French oak barrels, adding layers of complexity. The wine then rests on its lees for several months, a technique that enhances its structure and body.
