These old vines, deeply rooted in the black volcanic soils, yield grapes of exceptional concentration and complexity.
Calabretta's approach to winemaking is a testament to the traditions of Etna. The grapes are hand-harvested in mid-October, gently pressed, and fermented in stainless steel tanks. The wine then undergoes malolactic fermentation and matures for an impressive seven years in large Slavonian oak casks. This extended aging allows the wine to develop its full potential, resulting in a truly remarkable expression of Nerello Mascalese.
