The Dead Rabbit Irish Whiskey is aged for five years in bourbon casks and then finished in small virgin oak casks, made especially for The Dead Rabbit Irish Whiskey
Smell: First, bourbon comes out swinging, followed by vanilla – all sweetness and light. Then the rest of the gang pile in: spice, fruit, malt. Now you know what you’re up against.
Taste: Now that first encounter turns into attitude – this is a punchy, heavy-hitter. While the bourbon and vanilla are working you over in a one-two, the spice notes are running riot. This is classic Irish with a definite edge.
The Dead Rabbits were a notorious Irish immigrant New York street gang whose sworn enemies were the nativist anti-immigrant Bowery Boys. Their antagonism came to a head in a notorious riot that raged for days in 1857. Up to a thousand gang members were involved before order was finally restored. The leader of the Dead Rabbits was John Morrissey, a notorious figure who would later go on to become a Democratic congressman and senator.
