This joven, or un-aged, mezcal is crafted from a careful selection of both Espadin agave, harvested at 6 to 8 years (elsewhere noted as 8 to 14 years), and the highly regarded Tobala agave. The agave is traditionally cooked with oak and mesquite wood, a process that imparts subtle smoky nuances to the final spirit.
Mezcal Union El Viejo reveals inviting aromas of raw agave complemented by a hint of warm cinnamon.
