This mezcal undergoes a unique four-day roasting process, unlike the typical seven-day method, resulting in a smoother, more balanced flavor profile. This gives it a slightly sweeter taste with less smokiness, making it perfect for sipping or mixing in cocktails.
The agave hearts, or piñas, are harvested at peak maturity and roasted in traditional ovens. They are then ground using a horse-drawn stone wheel, called a tahona, preserving the artisanal methods. Natural fermentation occurs in pine barrels using wild yeasts, followed by double distillation in copper stills. This meticulous process creates a mezcal with complex flavors, ranging from earthy undertones to citrusy notes.
