This unique, uncategorized spirit is a meticulous 50/50 blend of two distinct distillates: one derived from fermented fresh sorghum juice, the other from fermented sorghum syrup. The fresh juice component, carefully fermented with a special Thai Rice Chong yeast, contributes vibrant, springy green flavors of melon, cucumber, and crisp green apple. In fascinating contrast, the sorghum syrup distillate, its fermentation ingeniously enhanced by reusing leftover wash (a 'dunder' technique inspired by Jamaican distilleries to concentrate critical esters), brings forward darker, earthy aromas reminiscent of harvest, alongside notes of hay, toasted honey, and a subtle, intriguing brininess. Both components are then carefully vacuum distilled to preserve their delicate and expressive aromas.
