The Black Pit is an extraordinary single-origin rum from the renowned Diamond Distillery in Guyana. What truly distinguishes this spirit is its unique blend of rums crafted from three of the world's only remaining commercially operating wooden stills: the Enmore wooden Coffey column still, the Versailles wooden single-vat still, and the Port Mourant double wooden vat still. These museum-piece stills contribute a depth and character rarely found in modern rum production. The fermentation process utilizes both open and closed methods with molasses-based wash, adding another layer of complexity.
The aging journey of The Black Pit is equally remarkable. It begins with five years of tropical maturation in Guyana in ex-bourbon casks. The rum then travels to Adelaide, South Australia, for a distinctive 'double dose' of dry aging for an additional two and a half years in South Australian Muscat (Woodstock Winery) casks and ex-Maker's Mark bourbon casks.
This meticulous process results in a dark brown rum with a captivating aroma of sweet raisins and plums, evolving into notes of orange, marmalade, and a hint of Christmas cake. A subtle smokiness and aniseed undertones, characteristic of the Port Mourant still, add further intrigue. On the palate, classic Demerara flavors of raisin, sticky toffee, and liquorice mingle with smoky and slightly musty nuances. The influence of the Muscat cask brings forward sweet dark chocolate and caramel, alongside marmalade and a touch of vanilla and oak spice. The finish is exceptionally long and complex, echoing all the intricate layers of flavor.
Bottled at 50% ABV, Dead Reckoning - The Black Pit is a limited release, initially highly sought after in Australia and now available in a very limited quantity in the UK and USA, making it a true treasure for discerning rum enthusiasts.
