Deviating from the more common dynamic solera system, this Manzanilla matured undisturbed for seven years in sealed American oak barrels. This patient, unblended maturation allows for an exceptional concentration of flavors and the development of a remarkably complex personality. It is then bottled "en rama"—with only the lightest of filtrations—to preserve every nuance of its authentic profile and texture.
The 2016 vintage is strikingly intense, dry, and zesty.
